My go-to cheap and easy vegan lunches

These are the lunches i make every single week, they are really simple to make and taste so good. I will list everything that i have used, instructions on how to make them and the prices. to calculate the prices of each meal i divided the price of the product by the amount of uses you would get out of it.

Ciabatta grilled sandwich

Ciabatta came to my attention when i ordered this meal in a restaurant in Dublin and it was so nice, it quickly became a staple in my diet. To make this simple meal it will cost you €1.40, £1.26, $1.60

Ingredients and price break down

Ciabatta – €0.50 (2 pack for €1)

Peppers – €0.20 (€1 for a bag of frozen peppers would easily serve 5 portions)

Violife cheese – €0.50 (€3.50 for a pack of grated cheese you easily get 7 uses from the bag)

Onion – €0.20 (you can pick up a bag of onions for €1)

Recipe – for one person

  • Boil your frozen peppers for 3-5 minutes
  • Cut your onions and Ciabatta in half while the peppers are boiling (feel free to add butter to your ciabatta, pure or earth balance are good)
  • Add the onions and peppers to the ciabatta and sprinkle some cheese on top
  • Then place the ciabatta into your oven grill or use whatever method you would like to melt the cheese

zucchini noodle curry

The easiest and nicest meal it will cost you €1.70, £1.52, $1.90

Ingredients and price breakdown

Zucchini – €0.40 (€.8 for a pack of 2)

Onions – €0.20 (€1 for a pack)

Bell pepper – €0.40 (€1.2 for a pack of three)

Peanuts – €0.10 (a bag of peanuts will cost €1.20 you are only using a handful)

Curry powder – €0.60 (a tin of curry powder will cost €4 easily get 7 uses from it)

Recipe – for 2 people

  • Cut up your zucchini, pepper and onion.
  • Add the vegetables to a frying pan, turn the heat to max, add enough water to cover the end of the pan and a drop of olive oil
  • when the water starts to boil reduce the heat so it will simmer, stir regularly
  • after 5 minutes add your curry powder and stir until all is dissolved
  • add your peanuts a minute before you take it up (i don’t know what it is, but the salted peanuts really add to the flavor of this meal.

Simple soup and bread

you cant get much cheaper or simpler than soup and bread, this meal will cost you €0.60, £0.54, $0.69

Ingredients and price break down

Newgate soup – €0.55 (any soup canned, packet, carton etc will do, i have some home made soups recipes i will upload them another time)

Sliced pan – €0.05 (you can get a 16 slice packet of bread for €0.80)

Recipe – one person

  • open soup, pour into bowl and heat
  • toast the bread to give it some crunch
  • ta-daa your done told you it was simple

    That ciabatta looks amAZING. I personally prefer my peppers unboiled, saves up time and washing up and I love the couch & sweetness of it being plain and fresh. Will definitely try out the recipe soon 😀

    1. Ya I’m glad you liked it, I only boil them because I find that if you put frozen peppers into the over they get really dry but if you boil them first they are juicy which is good with the bread 😍
